Bulk Beef and Our Practices

Why is Callaway Farms better than the grocery store?

On our farm, simply put, we eat what we sell. So we rely on the excellence of angus genetics. We care for our cows from the day they are born to the day of slaughter in spacious, quality pastures providing all the best nutrition to provide superior beef for our family and yours.

We never inject our cattle with hormones or steroids. The big commercial feedlots and high end steak houses regularly inject hormones and steroids to quickly, maximize growth.

We never feed our cattle antibiotics. The big feedlots routinely add antibiotic laced feed as preventatives against infection in over-crowded conditions.

What breed of cows are you raising?

We raise both red and black Angus. Their ability to produce a
high-quality carcass, with increased marbling, puts Angus beef as the top choice for consumers.

Plus, they are very friendly and docile herd, with great maternal instincts. Angus cattle are perfectly suited for the East Texas grasses and do well in our hot Texas summers.

Do you use hormones or steroids?

No, we do not use any hormones or steroids to enhance our beef in any way.

Unlike the big feedlots who use added hormones to promote muscle mass quickly.

We consistently raise exceptional beef by taking our time and growing beef naturally on pasture over 20 -24 months. Paired with great genetics, high quality grass and grain, and thorough maintenance.

How is my beef fed and finished?

From birth, our angus cattle graze on high quality forages and have plenty of fresh water from creeks and lakes. Additionally, we provide free choice minerals and salts near all watering tanks.

During the finishing period we introduce them to our own custom blended mixture of corn, cotton seed, farm raised silage and all the proper minerals needed for growth and development. We feed this ration for 120 days to perfect your beef and produce the most marbling and best quality for your table.

Where is my beef processed?

We trust all our beef to be handled with the utmost care and professionalism at Rail 19 Processing Plant. Rail 19 in Brashear, TX is a small, family owned and operated facility that operates under strict guidelines set by the USDA.

To maintain this standard each calf is inspected and graded by a licensed USDA personnel on duty daily at the East Texas plant. Additionally, they undergo daily inspections of the facility and handlers.

Why is it dry aged?

Dry-aging beef creates a unique and delicious flavor that can only be achieved through this process.

Dry aging meat involves exposing the entire beef in a controlled,
open-air environment to enhance its flavor and tenderness. The meat is
placed in a dry-aging beef chamber with specific temperatures and
humidity levels for 14 days. As the moisture is pulled out, the natural enzymes in the beef break down the muscle over time which makes it tender and more flavorful.

Is my beef USDA approved? Why?

Yes, all Callaway Farm's beef is USDA approved. We like the added safeguard this inspection provides our family and yours.

In addition, this allows us to provide our beef to customers across the US.

How is my beef packaged?

All beef is vacuum sealed and flash frozen in a USDA certified processing facility. Then quickly packed into waxed shipping boxes with added ice packs for extra protection on the trip to your home.

How long will the beef last in the freezer?

When properly vacuum-sealed and stored in a consistently cold freezer, beef can last for a considerable amount of time. In general, vacuum-sealed beef can be stored in the freezer for up to 2-3 years. This is a substantial increase compared to beef stored in traditional methods, which usually lasts 6-12 months.

Payment and Shipping

Why are there 2 prices?

The prices you see on our products page is the range of pricing, based on average hanging weights of calves. Please be aware, we sale beef by the pound and beef carcass weights can vary greatly. However, we strive to keep all calves within expected ranges.

To reserve your beef, we require a 50% deposit, nonrefundable. We will contact you after the beef has gone to the processor and a hanging weight is known.

If the final payment is not made by shipping time then your spot will be lost. Or moved forward to next season.

Can I make monthly payments on a whole beef?

Yes, and no.

On a whole beef purchase, we will except payment in 4 installments of $1000.00 every 60 days.

The final and 5th payment will be calculated when the cattle are weighed in at the processing and expected before shipping. The 5th and final payment could range from $320-800.

Making this agreement a total of 5 payments.

This option gives your family, 8 months or 240 days to payoff 1 whole beef.

Early payoff is always appreciated, however if the final payoff exceeds 8 months or 240 days you will forfeit all money paid down and no beef will be released to you, no exceptions. No refunds.

No products will be released for shipment, until the balance is paid in full.

What if I'm not home when my beef arrives?
